Eutrema japonicum Daruma - An herbaceous perennial of the mustard family. The plant grows naturally along stream beds in mountain river valleys in Japan. The two main cultivars in the marketplace are 'Daruma' and 'Mazuma'. Wasabi is generally sold either as a rhizome or stem, which must be very finely grated before use, as dried powder, or as a ready-to-use paste in tubes similar to toothpaste tubes. The part used for wasabi paste is variously characterized as a rhizome, a stem, or the "rhizome plus the base part of the stem". Attractive plants have heart-shaped to round foliage and will provide harvests of delicious, high quality, thick green roots with excellent flavored stems with upright, spreading heart-shaped leaves.
