Brassica oleracea var. capitata - Cabbage vegetable - chou) - The typical cabbage-like vegetable with a round head of thick leaves originated at the beginning of the European Middle Ages. Recently, cabbage has become the most widespread Brassica vegetable all over the world. It is eaten cooked, fresh as salad or pickled like sauerkraut and is a characteristic ingredient of special national dishes. The main consumption type is white cabbage with greenish-white leaves. Red cabbage with head of reddish-purple leaves. Although there is only little variation in taste compared with white cabbage, its use in cooking is very different. Another type, with heads of wrinkled leaves, is savoy, used in a manner similar to white cabbage.  Family: Brassicaceae
